Hi, hope you’re having a great start to the week :)

I have to tell you, I’m totally in love with this ice cream. It’s very similar to the strawberries and cream ice cream I made a few weeks ago, but for me this one slightly has the edge. It has a very delicate, mild, fresh and creamy flavour and a subtle honey sweetness. It’s perfect for cooling down on a hot summer’s day (or for brightening up a grey and dreary one.)

Made with a light and mild raw honey, instead of refined sugar, it’s also a slightly healthier alternative to the traditional sugar laden ice creams.

Just like my other strawberry ice cream recipe, you absolutely don’t need any kind of ice cream maker to make this. You simply make a custard from the dairy and eggs, stir in the honey, followed by the strawberries and lemon juice, then freeze! For best results you should take the ice cream out of the freezer and beat well at least once during the first 3 hours of freezing, this should prevent it from getting icy and keep it nice and creamy.

Ingredients
1 cup buttermilk
1 cup double cream/ heavy cream
5 egg yolks
1/4 cup + 1 tbsp raw honey
1 cup fresh strawberries, hulled
1 tsp lemon juice
Instructions
- Heat the buttermilk and cream in a heavy based saucepan to just below the boil. Beat the egg yolks in a heatproof bowl until pale and creamy. Gradually whisk the warm cream mixture into the yolks.
- Place the bowl over a saucepan of gently simmering water and heat until the custard thickens (about 10 minutes), stirring regularly. Leave to cool, then stir in the honey.
- In a food processor or blender, blend the strawberries, lemon juice and remaining tablespoon of honey until smooth. Lightly fold into the custard mixture.
- Pour the ice cream into a tin or tub and freeze the for about 90 minutes, then remove from the freezer and beat well. Freeze for at least another 3 hours before serving.
