Despite the fact that it’s cold and grey and miserable outside and has been like that for days (thanks english weather!), I made popsicles! They’ve got alcohol in though, which I think makes them suitable for all occasions – whatever the weather (except maybe breakfast.)
Like my raspberry cheesecake popsicles these are made with mascarpone cheese and greek yogurt, which makes them incredibly creamy and totally delicious!
You simply whisk the mascarpone and yogurt with a bit of milk, vanilla and sugar to make your ice-cream like base, then stir in your vodka (or other booze of choice.) Next blitz your strawberries in a food processor with a bit of sugar and lemon juice until you’ve got a nice fine constituency. Fold the strawberry mixture into the cream mixture, freeze for 3 hours and you’re good to go!
